Kale Salad with Apples & Prosciutto

This salad comes together in 15 minutes and is delicious! I find the key to eating healthy is to have some go to options in your repertoire that are quick, easy, and use ingredients that I typically have on hand.

The apple here is bright and refreshing here and the tartness plays well with the salty prosciutto. I used Granny Smith here but have used HoneyCrisp which are my favorite variety of apple.  Use what you like!

When I’m feeding the boys before football practice, I often add grilled shrimp or chicken and perhaps a scoop of quinoa to bump up the protein or just for a more filling salad.

The caramelized pecans adds a much needed textural contrast but you can certainly sub in pepitas or your favorite nuts or seeds here - which I do as well.

Kale Salad with Apples & Prosciutto

A quick, simple, no cook salad that takes no time make and perfect for lunch or as a light dinner option.

Ingredients

For the salad:

  • 1 bunch kale, stems removed and thinly sliced
  • 1 Granny Smith apple, thinly sliced
  • Pecorino Romano, shaved slices
  • a few slices of prosciutto
  • a handful of candied pecans (or pepitas)
  • a few sprigs of cilantro
  • lime wedge

For the dressing:

  • 1 c plain greek yogurt
  • 1 c fresh herbs (I use cilantro and a small handful of chives)
  • 1 garlic clove
  • s&p

Equipment needed:

  • Blender or food processor
  • cutting board
  • knife

Instructions

To make the dressing:

  1. Combine all of the ingredients for the dressing in a food processor or blender.
  2. Blend until smooth.
  3. Adjust seasoning as required.

To build the salad:

  1. Add kale to a plate or low rimmed bowl.
  2. Add cilantro leaves and arrange the apples and prosciutto over the kale.
  3. Add pecorino romano shavings and sprinkle candied pecans over top.
  4. Serve with dressing and a lime wedge.
