Chopped Quinoa Salad

This salad is packed with protein, healthy fats, and is absolutely delicious!

IS THIS SALAD SUITABLE TO MEAL PREP?

Absolutely! You can cook your quinoa and shrimp in advance, make the dressing, chop all of the ingredients separately, and keep stored in containers and build your salad as you desire throughout the week.

WHAT CAN YOU SUBSTITURE FOR RICE WINE VINEGAR?

If you don’t happen to keep rice wine vinegar in the pantry - I find Apple Cider Vinegar is the closest substitute. It mimics the sweet sour flavor profile the most. And in a pinch you can use white vinegar but it won’t have the subtle sweetness similar to rice wine vinegar.

WHAT IS A NUT FREE ALTERNATIVE TO PEANUT SAUCE?

I would sub in sunflower seed butter in place of the peanut butter and obviously switch out the garnishing of chopped peanuts for a sprinkle of sunflower seeds.

Ingredients

Peanut Sauce

  • 1/2 c peanut butter
  • 1 tbsp lime juice
  • 2 tbsp rice wine vinegar
  • 3 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tbsp sesame oil
  • 1 tsp chili oil
  • 1 tsp grated ginger
  • 1 tsp grated garlic

Chopped Salad

  • 1 c romaine lettuce
  • 1/2 c cooked quinoa
  • 1 medium cucumber, diced
  • 1/2 c cherry tomatoes, sliced in half lengthwise
  • 2 hard boiled eggs, diced
  • 1/4 c cooked chickpeas
  • 1/2 c cooked shrimp
  • For garnish: chopped peanuts and fresh cilantro

Instructions

Peanut Sauce

  1. In a small bowl, add peanut butter and warm in the microwave for 30 seconds to loosen it up.
  2. Whisk in the remaining ingredients until thoroughly combined. Add tbsp or two of water to thin it out to get the desired consistency.
  3. Set aside.

Chopped Salad

  1. To build your salad: add Romain lettuce to a large salad bowl.
  2. Begin to add the quinoa, cucumber, tomatoes, eggs, chickpeas, and shrimp.
  3. Drizzle peanut sauce over top.
  4. Garnish with chopped peanuts and fresh cilantro.
