Puerto Rican Sofrito

If you’ve been following me for a while, you know by now that sofrito is the base in many of my recipes: soups, stews, beans, rice, and more.

WHAT IS SOFRITO?

A blend of vegetables and herbs that lends depth and flavor to any dish. The Latin equivalent to French cuisine’s Mire poix.

WHAT IS AJI DULCE?

Aji Dulce, aka ajicitos, kind of look like habaneros but have NONE of the heat. They are a sweet pepper and sort of fruity flavor.

HOW TO MAKE SOFRITO?

I like to set up my mise en place first - I find it just allows the process to be easier and allows me to ensure I haven’t forgotten an ingredient.

Once your mise en place is set up just add all of your ingredients into a food processor and blitz for a few minutes until finely chopped.

CAN YOU FREEZE SOFRITO?

Absolutely! I like to double, or even triple, the recipe, pour into ice cube trays and freeze for use later. The cubes thaw beautifully and works great to add instant flavor during the week when you might be short on time.

Ingredients

  • 1 small Spanish onion, peeled and cut into quarters
  • 1 green pepper, deseeded and cut into quarters
  • 8 garlic cloves
  • 6 aji dulce peppers
  • 1 small bunch cilantro
  • 2 tsp white vinegar
  • s&p
  • 1/4 c olive oil

Instructions

  1. Blend all of the ingredients in a food processor until finely processed.
  2. Store in an airtight container in the refrigerator.
