Seafood Chowder

Seafood Chowder

This chowder is so rich, creamy, and loaded with seafood!

Ingredients

  • 4 tbsp butter
  • 1/4 c flour
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 medium potato, peeled and chopped
  • 1/4 c celery, chopped
  • 1 c clam juice
  • 3 c vegetable stock
  • 2 bay leaves
  • 1 tsp garlic powder
  • 1 tsp paprika
  • s&p
  • 2 corn cobs
  • 1.4 c each cilantro and parsley
  • a couple sprigs of fresh thyme
  • 1 c milk
  • 1/2 c heavy cream
  • 1 lb cod
  • 1 lb 8-12 ct shrimp, peeled, deveined, and seasoned with your favorite seafood blend.

Instructions

  1. Add 4 tbsp butter and 1/4 c flour to a dutch oven, over medium high heat.
  2. Add onions, garlic cloves, potatoes and celery and cook for 2-3 minutes.
  3. Add clam juice and vegetable stock.
  4. Add salt, 2 bay leaves, garlic powder, paprika, and black pepper.
  5. Toss in 2 corn - taken off the cob. I like to throw the cobs in as well and take them out when I’m about to serve.
  6. Add in cilantro, parsley, & thyme.
  7. Cover, bring to a simmer, and cook for 15 minutes.
  8. Stir in milk and heavy cream.
  9. Add in cod and shrimp, remove the corn cobs, and adjust seasoning as required.
  10. Let simmer for 10 minutes.
  11. Serve with fresh herbs sprinkled on top.
