Peppermint Mocha

Ok - so you know those Pumpkin Spice Latte fans you hear all about come fall? This is me, but for winter, and for Peppermint Mochas. It reminds me of the holidays and perhaps a grown up version of the hot chocolates I loved as a child.

When I ordered my seasonal Peppermint Mocha at Starbucks the first thing I would do was take the lid of just to lick some of the whipped cream. Ha! This version is elevated a bit with a house made whipped cream - if you’ve never had freshly made whipped cream you are in for a treat. It’s soooo good.

My chocolate shavings were from a block of Callebaut milk chocolate - and I do not regret it. Our house love milk chocolate over the bitterness of dark and it pairs perfectly with the peppermint in this mocha.

If you’d like to make it a ”skinny” you can skip the syrups, add raw cacao powder, a wee bit of date syrup, and 1/8th tsp of peppermint extract. Skip the garnishes and top with raw cacao nibs.

Ingredients

  • Freshly pulled espresso shots (I used 4) or 1/2 c of freshly brewed coffee
  • 1 tbsp peppermint syrup
  • 1 tbsp chocolate syrup
  • Freshly foamed milk
  • Whipped Cream
  • Garnish: Chocolate shaving and crushed candy canes

Peppermint Syrup

  • 1 c white sugar
  • 1 c water
  • 2 tsp peppermint extract

Whipped Cream

  • 1-1/2 c heavy whipping cream
  • 2 tbsp sugar
  • 1 tsp vanilla powder or extract

Instructions

Peppermint Syrup

  1. In a small saucepan, over medium heat, combine sugar, water, and peppermint extract.
  2. Bring to a simmer, reduce heat, and cook until the sugar is fully dissolved. (approximately 5 minutes)
  3. Remove from heat and let cool.

Whipped Cream

  1. Into a stand mixer, with a whisk attachment, add whipping cream, sugar, and vanilla extract.
  2. Beat on high until soft peaks form (approximately 2-3 minutes)
  3. Set aside.

To Build your Peppermint Mocha

  1. Add espresso or coffee to a large coffee mug.
  2. Drizzle in chocolate syrup.
  3. Add peppermint syrup.
  4. Foam milk and add to mug.
  5. Spoon whipped cream on top.
  6. Garnish with chocolate shavings and crushed candy canes.
