Peppermint Syrup
- In a small saucepan, over medium heat, combine sugar, water, and peppermint extract.
- Bring to a simmer, reduce heat, and cook until the sugar is fully dissolved. (approximately 5 minutes)
- Remove from heat and let cool.
Whipped Cream
- Into a stand mixer, with a whisk attachment, add whipping cream, sugar, and vanilla extract.
- Beat on high until soft peaks form (approximately 2-3 minutes)
- Set aside.
To Build your Peppermint Mocha
- Add espresso or coffee to a large coffee mug.
- Drizzle in chocolate syrup.
- Add peppermint syrup.
- Foam milk and add to mug.
- Spoon whipped cream on top.
- Garnish with chocolate shavings and crushed candy canes.
