Green Juice

This green juice is my go to when I like to reset from a bit of overindulgence (Eyes on you July 4th).

It’s refreshing, has a great zing from the ginger, and is easily malleable for whatever herbs or leafy greens you might have on hand. And, it’s super healthy!

EQUIPMENT NOTES:

I use a Breville juicer. You can find the exact model I use here: (JUICER) Alternatively, you can use a high powered blender and strain out the pulp with a nut milk bag.

MEAL PREP NOTES:

I like to batch juice for my crew on Sundays and Thursday. I store my juice in the refrigerator for up to 3 days. Alternatively, I have frozen juice immediately after juicing with great results.

JUICING NOTES:

When I juice, I like to start with the smaller pieces, like the ginger, lemon, and smaller herbs. Following with some of the juicier items like the cucumber and apples and finishing with the celery. I just alternate until I have run everything through the juicer.

SUGAR NOTES:

You can certainly omit the apples if you’d like to lower the natural sugars in this juice. But, if you are new to juicing, I find adding even just 1/2 of an apple helps with transitioning to the juice world.

Ingredients

  • 1 bunch celery
  • 1/2 English cucumber
  • 2 green apples
  • 1/2 inch knob ginger
  • 1 lemon
  • 1 bunch parsley, cilantro, or watercress

Instructions

  1. Wash all of the produce thoroughly.
  2. To prep the produce: core the apples, cut off the end piece of the celery bunch, and peel the lemon, if desired. I tend to leave the lemon peel on. Make sure to cut them into pieces that will fit easily into your juicer chute.
  3. Run the produce through a juice, starting with smaller pieces (ie. ginger, lemon, and herbs), juicier pieces (ie. cucumber and apples) and finishing with the celery.
  4. Serve immediately or store in refrigerator up to 3 days.
