Cranberry Compote Parfait

What to do with all those leftovers? The most common question immediately following Thanksgiving.

For the cranberry sauce: make quick parfaits for breakfast. It‘s delicious and super easy to make for a quick breakfast morning.

The trick to keeping it on the healthier side is to isolate the sugars in as many components as possible. When you are layering ingredients it’s easy to not realize how the sugars and calories can add up. So, for the greek yogurt - use plain and non fat if possible. Use a homemade or high quality granola that is not loaded with refined sugars. Use honey or maple syrup to sweeten if needed - they are unrefined sugars that are better options than your traditional sugars.

If you don’t happen to have cranberry sauce, I’ve included a quick refined sugar free recipe that you can throw together in 10 minutes. Make it ahead of time to allow to cool and you can keep stored in the fridge for approximately 2 weeks.

Ingredients

Cranberry Compote

  • 1 - 12 oz bag of fresh cranberries
  • 1/2 c honey or maple syrup
  • 1/4 c water
  • 1/4 c freshly squeezed OJ
  • Zest of 1 orange
  • 1/2 tsp ground cinnamon
  • pinch of pink Himalayan sea salt

Cranberry Compote Parfait

  • 2-3 tbsp leftover cranberry compote or sauce
  • 1/2 c plain or vanilla nonfat greek yogurt
  • Granola (I used Purely Elizabeth Pumpkin Cinnamon Granola
  • Honey (optional)

Instructions

Cranberry Compote

  1. In a medium saucepan, add all of the ingredients over medium high heat.
  2. Bring to a simmer and reduce heat to low.
  3. Cook for approximately 5-10 minutes, stirring occasionallyn, until cranberries begin to pop.
  4. Remove from heat and allow to cool.
  5. Note: Sauce will thicken up as it cools.

To build the Cranberry Compote Parfait:

  1. In a bowl or parfait glass, add 1/2 of the greek yogurt at the bottom.
  2. Add the cranberry compote on top.
  3. Add remaining greek yogurt and sprinkle with granola over the top.
  4. Garnish with a drizzle of honey, if using.
  5. Serve immediately.
