Ingredients

  • 2 c chicken stock
  • 2 c half and half
  • 1/2 tsp salt
  • 1 c shredded Muenster cheese
  • 1 c stone ground white grits
  • 1 lb 2-25 ct shrimp, peeled and deveined
  • 2 slices of thick cut bacon, sliced thinly
  • 1/2 lemon or lime
  • 1/4 c cilantro, chopped
  • 1 c chicken stock slurry (chicken stock mixed with 1 tbsp flour)
  • s&p

Instructions

  1. Add chicken stock and half and half to a sauce pan and bring to a boil.
  2. Add grits, salt, and reduce heat to low and cook, stirring occasionally, for 20 minutes.
  3. Stir in cheese and set aside.
  4. Add bacon to a sauté pan, over medium high heat, and cook until done.
  5. Remove bacon (leave the rendered fat in the pan.
  6. Add shrimp, garlic, scallions, and sauté for 2-3 minutes.
  7. Add squeeze of 1/2 lemon or lime, chicken stock slurry, cilantro, s&p, and cook for a minute or two to allow the sauce to tighten up a bit.
  8. Garnish with the cooked bacon.
