1 small bunch asparagus, tough ends removed and cut diagonally into 1 inch pieces
1 garlic clove, minced
1 small pearl onion, sliced
4-6 slices of prosciutto
1/4 c parmesan cheese, grated
1 ball of fresh burrata
1/4 c fresh pesto
basil for garnish
s&p to taste
Instructions
Preheat broiler
In a medium bowl, whisk together eggs, milk, s&p and set aside.
In a cast iron pan, over medium heat, add asparagus and cook for approximately 4 minutes.
Stir in minced garlic and pearl onion.
Pour egg mixture over asparagus mixture in pan.
Cook over medium heat and as egg mixture sets, run a spatula around the edges of skillet, lifting egg mixture so the uncooked portion flows underneath.
Contihue cooking and lifting edges until egg mixture is almost set.
Add slices of proscuitto and Parmesan cheese over the top.
Place cast iron pan under the broiler, 4-5 inches away from heat.
Broil for 1-2 minutes until the top is set.
Remove from the oven and garnish with fresh basil, drizzle of pesto, and a burrata ball.
