The Perfect Homefries

Ingredients

  • 4 lbs of potatoes (mix of russet and yukon gold), peeled and chopped
  • water (enough to cover the potatoes in a pot)
  • 2 tbsp salt
  • 1/2 tsp baking soda
  • 1/4 c duck fat (or oil of preference)
  • sprigs of thyme
  • 3 or 4 garlic cloves, sliced
  • s&p
  • Garnish: chives, thinly sliced

Instructions

  1. Preheat oven to 400.
  2. Add potatoes to a large pot, with enough water to cover the potatoes.
  3. Add baking soda and salt.
  4. Bring to a boil, reduce heat, and let simmer until potatoes are just fork tender.
  5. Drain potatoes and set aside.
  6. Meanwhile, add duck fat to a sauté pan, over medium high heat.
  7. Add salt, fresh thyme, garlic cloves, and cook for a minute or two.
  8. Remove from heat, strain out the thyme and garlic, and add oil to a large bowl.
  9. Add potatoes to bowl and toss in the oil to coat completely.
  10. Add the potatoes to a rimmed lined baking sheet, spreading out evenly.
  11. Place in the oven on the lowest rack.
  12. Cook for 20 minutes, flip, and cook for an additional 20 minutes.
  13. Remove from oven and serve immediately.
