Elderberry Chia Pudding

The school year is upon us and it’s usually the time that I will stock up on elderbery syrup, echinachea and the like. Between flu season and germs children are bound to come in contact with at school - the math is not stacked in our favor with a sick child coming home.

Elderberry is packed with antiviral and antioxidant properties, loaded up with vitamin C and flavanoids - it is often used to help fight and limit/shorten symptoms when fighting a cold and flu. So, we had it to the repertoire come fall season!

Chia seeds are high in fiber, omega 3s, and a great quality source of protein. I find adding them to breakfast allows the boys to feel fuller longer until lunch is ready at school.  And I just love the texture when added to liquids - it has this gel like quality that‘s addictive actually.

The chia pudding is delicious and a great meal prep option as it can be made the night before for a quick breakfast the next day.

Elderberry Chia Pudding

Ingredients

Vanilla Chia Layer

  • 1/3 c white chia seeds
  • 1-1/2 c coconut almond milk (or any milk of choice)
  • 1 tbsp of maple syrup
  • 2 tsp of vanilla powder (or extract)

Elderberry Layer

  • 1 pt fresh or frozen blueberries
  • 6 oz fresh or frozen blackberries
  • 1 tbsp elderberry powder
  • 1 c coconut almond milk (or any milk of choice)
  • 1/3 c white chia seeds

Equipment

  • High powered blender
  • 2 large mason jars with lids
  • measuring cups and spoons
  • whisk

Instructions

  1. In a large mason jar, whisk together all of the vanilla chia ingredients until combined. Set aside.
  2. In a high powered blender, add blueberries, blackberries, elderberry powder and coconut almond milk. Blend for approximately 30 seconds.
  3. Add the mixture to a separate large mason jar. Whisk in the chia seeds. Set aside.
  4. Store in refrigerator for at least 1 hour or overnight.
  5. For serving: Layer some of the vanilla chia layer, then the elderberry layer, and finish with garnishing with fresh blueberries
