Ingredients

  • 4 large eggs
  • 3/4 c milk
  • 4 tbsp butter
  • 2/3 c AP flour
  • 2 tbsp cornstarch
  • 1/2 tsp salt
  • 1/2 tsp cracked pepper
  • 1/3 c parmesan, grated
  • 2 tbsp parsley, chopped
  • 3 tbsp basil, chopped
  • 2 tbsp chives, chopped
  • handful of arugula
  • squeeze of 1/2 lemon
  • 1 small burrata ball
  • proscuitto
  • poached eggs

Instructions

  1. Preheat oven to 450 for 20 minutes with a cast iron skillet inside.
  2. Prep Cheesy Herb: In a small bowl, mix together the parmesan cheese, parsley, basil, chives and set aside.
  3. Blend eggs in a blender on high for 1 minute.
  4. Stream in milk and 2 tbsp melted butter
  5. Blend 30 seconds
  6. Add flour, cornstarch, s&p, and blend just to combine.
  7. Remove skillet from oven.
  8. Add 1 tbsp butter
  9. Pour batter into skillet.
  10. Sprinkle cheesy herb topping on top.
  11. Add back to oven and cook for 20-25 minutes.
  12. Remove from oven and top with more cheesy herb, handful of arugula, lemon, prosciutto, burrata, and poached eggs.
  13. Serve immediately.
