Blueberry Pancakes

A classic in our house - a clutch recipe to add to your repertoire.

Ingredients

DRY

  • 2 c AP flour
  • 3 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt

WET

  • 2 c whole buttermilk
  • 2 large eggs
  • 1 tsp vanilla extract

STIR INS

  • 4-5 tbsp melted butter
  • 1-1/4 c blueberries

Instructions

  1. Preheat an electric griddle (I set my temp to 325)
  2. In a large bowl, sift together the dry ingredients.
  3. Separately, whisk together the wet ingredients.
  4. Incorporate the wet into the dry ingredients. Be careful not to overmix - just maybe 10-12 stirs to incorporate - the batter will still appear lumpy.
  5. Stir in melted butter and blueberries.
  6. Using a large ice cream scoop, portion out the pancake batter onto an electric griddle.
  7. Cook for 3 minutes.
  8. When bubbles start to surface on the batter and pop, flip pancakes, and cook for 2-3 minutes longer.
  9. Serve immediately with your favorite toppings.
