Ingredients

  • 1/2 c unsalted butter, melted
  • 1/2 c coconut palm sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1-1/2 c AP flour
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • 1/4 c sour cream
  • 3 medium very ripe bananas, sliced
  • 1/2 c pecans, crushed
  • Optional: 1/3 c mini chocolate chips

Instructions

  1. Preheat oven to 350.
  2. In a stand mixer fitted with a paddle attachment: add melted butter, sugar, and stir to combine.
  3. Add eggs, one at a time, until thoroughly incorporated.
  4. Add vanilla, salt, and baking soda.
  5. Add in sour cream and flour, stirring until just combined.
  6. Add in bananas and pecans.
  7. Add the mixture to a parchment lined loaf pan.
  8. Bake for approximately 55-60 minutes.
  9. Remove form the oven and cool the bread in the pan on a wire rack for 5 minutes.
  10. Turn the bread out of the pan and let cool completely on the rack.
