Banana Cream Pie Chia Pudding

My obsession of late, behind the scenes, is chia pudding. Seriously -  I have a ton of flavor combinations currently in the rotation. Chia pudding is versatile absorbing the different flavor profiles you combine with it.

Chia seeds are a great way to increase your fiber intake while also being loaded with antioxidants, a high quality protein, and a great source fo Omega 3 fatty acids.

Also, consider this a great weekday morning meal prep hack considering you can make it the night before and have it ready to go for morning. My boys love it! And I tend to have a jar for each of us customized to our taste preferences.

Banana Cream Pie Chia Pudding

A healthier alternative to your favorite banana cream pie.

Ingredients

  • 1/3 c black chia seeds
  • 1 c coconut milk
  • 1 tbsp maple syrup (or 2 tsp date syrup)
  • 1 banana mashed
  • 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • pinch of pink Himalayan sea salt

Toppings:

  • unsweetened coconut flakes
  • granola (maple almond butter)
  • banana slices
  • Optional: 2 Nilla Wafers crushed

Equipment:

  • Mason jar with lid
  • whisk

Instructions

  1. In a mason jar, whisk together: chia seeds, coconut milk, maple syrup, cinnamon, vanilla extract and sea salt.
  2. Add lid and put in the refrigerator for atleast 4 hours or overnight.
  3. When ready to eat: add one mashed banana and top with coconut flakes, granola, banana slices, and if using, crushed Nilla Wafers.
