Quick and Easy Ice Cream Sandwiches

Let’s be honest. Sometimes, as a mom, even one that loves to cook, you just don‘t always have the time to scratch make everything. When this is the case for me, sometimes, I double down on the quality of ingredients and on presentation.

These ice cream sandwiches take no time to make, can be made in advance, looks super cute and it will present well for any adult or child summer affair.

It’s just as simple as picking up some cookies from the grocery store bakery. I go to Whole Foods -Do NOT sleep on their bakery. The brown butter chocolate chip and the double chocolate chip are bomb. And I find them to be the perfect thickness and chewiness I need for an ice cream sandwich.

The ice cream really is the star - so use good vanilla ice cream. My favorite brands that I can find regularly in the supermarket are Jeni’s and Van Leeuwen and I like to use vanilla as a canvas and let the toppings create the vibe - if that makes sense. You can totally use “Nice Cream” or any healthy ice cream alternative. This is more of a method vs an exact recipe.

For equipment: all you need is an ice cream scoop, white parchment paper, and a vessel to contain them. You can also get string or twine to wrap them individually with the parchment paper. The presentation will be super cute.

You can also create a little bar of toppings and let the kids roll their sandwiches and choose their toppings.

Ingredients

  • 1 pt of good ice cream (I used vanilla) and my faves are Jeni’s and Van Leeuwen
  • 6 large cookies (I used double chocolate) from the Whole Foods bakery.
  • Toppings: chopped nuts (I used hazelnuts), toasted or raw cacao nibs, crushed dried fruit (strawberry would be perfect) , even dye free sprinkles.

Instructions

  1. Take ice cream out and let it sit out on the counter for a few minutes to soften slightly. My ice cream was very scoopable when I was ready to make the sandwiches.
  2. To set up: place a container in the freezer and have pieces of parchment paper ready to go as you build your sandwiches.
  3. Add toppings in individual bowls.
  4. Line your cookies up (I try to make sure they are similarly sized) and using a large ice cream scoop, portion out 1 scoop of ice cream on each cookie bottom.
  5. Top with another cookie and press down gently.
  6. Roll in toppings if using. I will use my hands sometimes to make sure all of the ice cream gets covered.
  7. As you make the sandwiches, add them to the container in the freezer, cover and store until ready to use.
  8. Serve right away or store in freezer for later use.
