Cherry Nice Cream

Cruz (my 11 year old) and I were practicing ice cream shots. I’ve been teaching him how to use my camera equipment and so he’s been shadowing me on a lot of these shoots.

To work on an ice cream shoot with him I went to grab some vanilla ice cream and it was still pretty soft so not shootable for today. This cherry nice cream was a happy accident. We threw together some frozen bananas and cherries and drizzled some tart cherry concentrate over top along with a single cherry on top. AMAZING this dessert was. So, here I am writing a blog post on it because it was THAT good.

It has minimal ingredients and if you wanted a traditional “Cherry Garcia” nice cream could totally throw in some raw cacao nibs or chopped dark chocolate but if you know in my previous blog post was a double chocolate cookie recipe, so yeah, we’re good on chocolate now (so many cookies tested and tasted ha!).

The tart cherry concentrate might not be something you think to grab when you pass it in the supermarket. I find mine at Whole Foods but I’m obsessed with it: I add to smoothie bowls, smoothies, drinks, pie filling, etc. A little goes a LONG way! And it is a perfect tart counterbalance to sweet nice cream.  We LOVE it.

I always keep frozen bananas on hand so a dessert like this is 5-10 minutes away to satisfy any sweet cravings in the healthiest of ways.

You can use any kind of milk: to keep it plant based go for almond or cashew milk. And you only need a splash or two. Add a little bit and blend and if you need a little more help getting the mixture going add a splash more until you’ve reached the desired consistency.

Ingredients

  • 4 large frozen bananas
  • 1 c frozen cherries
  • 2-3 tbsp. of milk of choice
  • Optional: 1/4 c raw cacao nibs or chopped dark chocolate
  • Optional: 1 tbsp tart cherry concentrate

Equipment

  • High powered blender
  • ice cream scoop
  • ice cream storage container

Instructions

  1. Place frozen bananas and a tbsp of the milk and blend until combined. Stopping along the way to scrape down sides as necessary.
  2. Add frozen cherries (and raw cacao nibs or dark chocolate if using) and pulse until the just combined. You want to still see chunks of the cherries throughout the nice cream.
  3. Remove from blender and serve immediately with a drizzle of tart cherry concentrate or store in an ice cream storage container in the freezer until ready to use.
