Golden Beet Smoothie

I stopped in Whole Foods the other day and found a ton of beautiful golden beets freshly stocked - I had to grab some for the crew. I absolutely love their slightly earthy flavor with a subtle sweetness. They make the perfect addition to this nutrious and delicious smoothie!

WHAT ARE GOLDEN BEETS?

Red beets you are likely more familiar with, however, I am mildly obsessed with golden beets. I prefer them to red beets particulary because they are not prone to staining my freshly manicured hands! They are milder in flavor than red beets with a sweeter profile. I find that their earthy flavor pairs well with citrus - perfect addition in this golden beet smoothie!

WHAT ARE THE BENEFITS OF GOLDEN BEETS?

They have a similar nutritional profile as with red beets - help to lower blood pressure, fight inflamation, supports liver health, and provides dietary fiber and also includes some other elements of orange and yellow foods. Some of the benefits of their beautiful golden color include beta-carotene, vitamin A, vitamin C, flavanoids, potassium, and more.

CAN I EAT BEETS RAW?

Yes. I clean, quarter the beets, and throw them right in the blender with the other ingredients. Please note: I use a high powered blender. They are also a delicious addtion sliced thinly and add to any salad or served carpaccio.

HOW TO MAKE A GOLDEN BEET SMOOTHIE?

The easiest way to make a smoothie is, first, using a high powered blender. The next important step, and often overlooked, is how you layer your ingredients in your blender. First add your liquid (orange juice and coconut water), followed by any powders you are adding (ground turmeric and hemp hearts), then add your harder items (frozen banana, mango, and golden beets). This process allows for smoother result in the end. If you were adding a creamier item like yogurt and/or a leafy green (perhaps the beet greens!) these items would be added right after the powders and before the harder items - just fyi!

Ingredients

  • 1 small golden beet
  • 1/4 c frozen mango
  • 1 medium frozen banana
  • 1/4 tsp ground turmeric
  • 1 c coconut water
  • 1 c orange juice
  • 2 tbsp hemp hearts

Instructions

  1. Blend the above ingredients in a high powered blender.
  2. Pour into glass and serve immediately.
