Ingredients
- 8 eggs
- 3/4 c milk
- 1 medium potato, chopped
- 4 slices of prosciutto, thinly sliced
- 1/2 c cheddar cheese, shredded
- 1/4 c Parmesan cheese, freshly grated
- 1 green onion, thinly sliced
- basil
- s&p
- cooking spray (I use an olive oil spray)
Instructions
- Preheat the oven to 375 and spray a nonstick muffin pan with a nonstick cooking spray.
- In a large bowl, whisk together the eggs, milk, and s&p.
- Stir in the remaining ingredients.
- Using a large cookie scoop, portion out egg mixture into the muffin pan.
- Bake for approximately 15 minutes.
