Ingredients

  • 8 eggs
  • 3/4 c milk
  • 1 medium potato, chopped
  • 4 slices of prosciutto, thinly sliced
  • 1/2 c cheddar cheese, shredded
  • 1/4 c Parmesan cheese, freshly grated
  • 1 green onion, thinly sliced
  • basil
  • s&p
  • cooking spray (I use an olive oil spray)

Instructions

  1. Preheat the oven  to 375 and spray a nonstick muffin pan with a nonstick cooking spray.
  2. In a large bowl, whisk together the eggs, milk, and s&p.
  3. Stir in the remaining ingredients.
  4. Using a large cookie scoop, portion out egg mixture into the muffin pan.
  5. Bake for approximately 15 minutes.
