Grilled Peach, Shrimp & Burrata Salad

Ingredients

  • 1 lb shrimp (8-12 ct), peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chipotle chili powder
  • 1/2 tsp smoked paprika
  • zest of 1 lime
  • 3 c romaine lettuce, grilled and torn apart
  • 1 peach, grilled and thinly sliced
  • 1 shallot, thinly sliced
  • 1 ear of corn, grilled and shucked off the cob
  • 1 golden beets, grilled and quartered
  • 1/2 c cherry tomatoes, halved
  • 1/2 Avocado, thinly sliced
  • 1 small Burrata Ball
  • 1/4 c pistachios, crushed
  • Drizzle of olive oil
  • Squeeze of lime
  • Honey
  • S&P

Instructions

  1. In a medium bowl, combine the shrimp, olive oil, chili powder, paprika, lime zest, and s&p.
  2. Preheat an outdoor grill or grill pan to high.
  3. Grill shrimp for 2 minutes on each side.
  4. To assemble, place romaine lettuce in a large bowl and top with peaches, golden beets, corn, and tomatoes.
  5. Add shrimp and avocado.
  6. Top with burrata and crushed pistachios.
  7. Serve with a drizzle of olive oil, honey, squeeze of fresh lime juice, and a sprinkle of salt & freshly cracked black pepper over top.
