Golden Beet Hummus

Ingredients

  • 1 - 15 oz can of chickpeas
  • 2-3 small golden beets, scrubbed, washed and quartered
  • 2 garlic cloves
  • 2 tbsp tahini
  • squeeze of 1/2 lemon
  • 1 tsp crushed red pepper flakes
  • 2-4 tbsp olive oil
  • s&p
  • 1-2 tbsp cold water

Instructions

  1. Blend the above ingredients in a high powered blender or food processor until smooth. Add in water to thin out as needed.
  2. Scoop out and serve immediately.
