Gambas Al Ajillo
A quick and delicious meal that is bright, garlicky, spicy and rich! Serving this dish will do any Tapas bar proud.

Ingredients
- 1/2 c olive oil
- 1 lb 8-12 ct shrimp, deveined and peeled (I like to leave the tails on)
- 8-10 garlic cloves, sliced
- 1 tsp smoked Spanish paprika
- 1 tsp crushed red pepper flakes
- 1/4 c good white wine
- squeeze of 1/2 lemon or lime
- 1/4 c chopped cilantro and parsley
- s&p
Instructions
- Heat olive oil in a sauté pan over medium high heat until oil is just shimmering.
- Add garlic and the red pepper flakes.
- Cook just until fragrant, about 60 seconds.
- Add seasoned shrimp and paprika, stirring to coat on both sides, and cook for a minute or tow.
- Add white wine and lemon, cook for another 2 minutes or so (depending on the size of the shrimp used).
- Stir in parsley and cilantro
- Serve with warm crusty bread.
