Ingredients
Peanut Sauce
- 1/2 c peanut butter
- 1 tbsp lime juice
- 2 tbsp rice wine vinegar
- 3 tbsp soy sauce
- 1 tbsp maple syrup
- 1 tbsp sesame oil
- 1 tsp chili oil
- 1 tsp grated ginger
- 1 tsp grated garlic
Chopped Salad
- 1 c romaine lettuce
- 1/2 c cooked quinoa
- 1 medium cucumber, diced
- 1/2 c cherry tomatoes, sliced in half lengthwise
- 2 hard boiled eggs, diced
- 1/4 c cooked chickpeas
- 1/2 c cooked shrimp
- For garnish: chopped peanuts and fresh cilantro
Instructions
Peanut Sauce
- In a small bowl, add peanut butter and warm in the microwave for 30 seconds to loosen it up.
- Whisk in the remaining ingredients until thoroughly combined. Add tbsp or two of water to thin it out to get the desired consistency.
- Set aside.
Chopped Salad
- To build your salad: add Romain lettuce to a large salad bowl.
- Begin to add the quinoa, cucumber, tomatoes, eggs, chickpeas, and shrimp.
- Drizzle peanut sauce over top.
- Garnish with chopped peanuts and fresh cilantro.
