Chicken and Hominy Soup

Ingredients

  • Olive oil
  • 4 garlic cloves, minced
  • 1/2 of 1 poblano, chopped
  • 1 packet of Goya culantro y achiote seasoning
  • 1 tsp garlic powder
  • 4 c chicken stock
  • 1/2 leftover roast chicken, pulled off the bone, and chopped
  • 1 - 28 oz can of hominy
  • 1 c of salsa or canned tomatoes
  • 1 c of cooked rice
  • 1/4 c cilantro, chopped (leaves and stems)
  • squeeze of 1/2 lime
  • 1 tsp honey
  • s&p
  • guacamole
  • radish, sliced
  • cilantro (for garnish)

Instructions

  1. Heat oil in a heavy large pot over medium high heat.
  2. Add garlic cloves, poblano, Goya seasoning, garlic powder, and cook for a minute or two until fragrant.
  3. Add chicken stock, chicken, hominy, canned tomatoes, rice, cilantro, lime, honey, s&p, and bring to a boil.
  4. Reduce heat and simmer for approximately 15 minutes.
  5. Serve with guacamole, sliced radish, and cilantro.
