Chicken and Hominy Soup

Ingredients
- Olive oil
- 4 garlic cloves, minced
- 1/2 of 1 poblano, chopped
- 1 packet of Goya culantro y achiote seasoning
- 1 tsp garlic powder
- 4 c chicken stock
- 1/2 leftover roast chicken, pulled off the bone, and chopped
- 1 - 28 oz can of hominy
- 1 c of salsa or canned tomatoes
- 1 c of cooked rice
- 1/4 c cilantro, chopped (leaves and stems)
- squeeze of 1/2 lime
- 1 tsp honey
- s&p
- guacamole
- radish, sliced
- cilantro (for garnish)
Instructions
- Heat oil in a heavy large pot over medium high heat.
- Add garlic cloves, poblano, Goya seasoning, garlic powder, and cook for a minute or two until fragrant.
- Add chicken stock, chicken, hominy, canned tomatoes, rice, cilantro, lime, honey, s&p, and bring to a boil.
- Reduce heat and simmer for approximately 15 minutes.
- Serve with guacamole, sliced radish, and cilantro.
