Golden Beet Hummus

Ingredients
- 1 - 15 oz can of chickpeas
- 2-3 small golden beets, scrubbed, washed and quartered
- 2 garlic cloves
- 2 tbsp tahini
- squeeze of 1/2 lemon
- 1 tsp crushed red pepper flakes
- 2-4 tbsp olive oil
- s&p
- 1-2 tbsp cold water
Instructions
- Blend the above ingredients in a high powered blender or food processor until smooth. Add in water to thin out as needed.
- Scoop out and serve immediately.
